Header700Before I introduce myself I would like to thank Will Foods for allowing me to be a guest on their blog. I am a proud Western New Yorker and it gives me joy learning about local companies and working with them.

My name is Ashleigh and I am the owner of Living Off Love and Coffee, a lifestyle blog. I started blogging in 2010 before the birth of my first child and enjoy the ability to work for myself and make great connections with brands. I live with my two children and husband in a small town in Western New York. We are a foodie family and love keeping it local.

This time of year my family enjoys breaking out the grill and having delicious sandwiches. No, I’m not talking about little deli meat sandwiches. I have to feed a grown man and two growing boys so these must be delicious and filling.

Our favorite to make is Grilled Buffalo Chicken Sandwiches; like I said, we love keeping it local, and what’s more Western New York than Buffalo Chicken? Here’s how I make it for my family, and you could enjoy the same when you order your food through Will Foods!

Grilled Buffalo Chicken Sandwich


1 lb. Boneless Skinless Chicken Breasts



2 Tbsp. Butter

2 Tbsp. Hot Sauce

4 Hamburger Buns (Toasting Optional)

2 Stalks Celery, Thinly Sliced

½ Cup Sour Cream

¼ Cup Blue Cheese Dressing


Preheat your grill, if using charcoal arrange to have direct and indirect heat.

Butterfly the chicken to ensure it is all roughly the same thickness.  Season with salt and pepper.


Grill over medium high heat 4 minutes per side.  Move to indirect heat to finish cooking.  Should read 170˚-175˚ on an instant read thermometer.  Remove and cover with foil let rest 10 minutes.


Slice the chicken into ¼ inch strips, cut down at a 45˚ angle towards the edge you are cutting.  Place in a large bowl.

In a small bowl in the microwave melt the butter.

Add the hot sauce to the butter and stir to combine.

Pour the sauce over the chicken slices and toss to coat the chicken.

In a small bowl combine the sour cream and blue cheese dressing.

On the lower portion of a bun arrange ¼ of the slices across the bun.

Spoon some of the sour cream mixture over the chicken.

Sprinkle with celery slices.


Top with other half of bun.
